How can you get good and tasty thick butter milk?

How can you get good and tasty thick butter milk? There are two ways of getting more of these healthy bacteria. Add also “triFit” to get Probiotic bacteria.
1. Cultured Butter making: (simple method for small production)
Raw material : cream with 30 – 35 % fat
Heating : 85 – 100 C (185 – 212 F)
Cooling : 21 C (70 F)
Inoculate : add set starter DL-Mix M FZ 2-22 Dip 5 u per 200 lt.
(mix in 500 ml sterile water and mix well into cream)
Ripening : 16 – 20 hours
Churning : Use hand mixer or butter churn
Draining : When butter is formed drain off buttermilk
Washing : Use portable water
Salting : Use 1.25 % salt to enhance butter flavour
Kneading : Mix in salt.
Cool : Butter in parchment paper
Buttermilk is cooled overnight for better viscosity and flavour
2. Make buttermilk directly.
1. Use skim, 2 % or homo and add milk powder like you do with yoghurt. The higher the fat content the less powder you need. Powder gives firmness as well as the cultures used.
2. Bring the milk (w/powder) to 85 - 90 C and hold for 30 minutes.
3. Cool to 21 - 24 C.
4. Add culture Probat M 4 serie 500 (500 L. buttermilk) or
DL-Mix M FZ 2-22 Visbyvac DIP 5u (500 L. buttermilk) +
St. therm. V 1 Visbyvac DIP
5. Ferment at 20 - 24 C for 18 - 24 hours while avoiding agitation.
6. After fermentation place the set milk in refrigerator to ripen for 12 - 24 hours hours
7. Buttermilk can be stored in the refrigerator for 1 week. Lactic acid produced by lactic acid bacteria has a preserving effect. During this time, however, the acid content will increase since the microorganisms (mesophilic culture) maintain moderate activity even in the refrigerator.
8.As the St. therm. V 1 has a gel effect and depending on the solids in the milk you should try some smaller batched to find how much skim milk powder to use.
