Q. How come I can?t find your products on the web site store?

A. Since we have many products and for competitive reasons we don?t post it on the net.

Give us the product you like to make and size of batch, then it is so much easier to give you the response you like. Our starter cultures come in many sizes.

Q. What are the sizes of starter cultures can I order on line?

A. For small batches use Vital- Ferment (Bionic)

www.danlac.com (1 lt. and up).

Larger batches use Danisco starter cultures direct set 50 DCU is up to 500 Lt. (130 gal), 100 DCU for up to 1,000 Lt. (265 gal.) milk and so on.

Q. For rennet enzymes what is available?

A. Microbial rennet tablets (vegetable) can be used for up to 50 Lt. milk (13 gal.). RenNet up to 100 liter (26 gal) and 500 gr. Valiren using 2 ? 3 gr. per 100 liter. Also in 25 kg. pails.

Renco pure calf rennet powder comes in 100 gr., 500-gr. pots and 25-kg pails. Usage is 2 ? 3 gr. per 100-lt. milk.

Comes with instructions of use.

Q. Does pure calf rennet powder work the same us liquid rennet.

A. Yes.

It is recommended that the measured amount of rennet powder is dissolved in 50 times its own weight of cold chlorine free potable water allowing 30 minutes with occasional agitation for complete dissolution. Thereafter follow regular Cheesemaking procedures.

 
Q. What about lipase enzymes are they also available from Danlac

R. Yes, we have lamb lipase available and can recommend usage for the kind of cheese you like to make. (E.g. Provolone, Asiago, Parmesan, Feta etc.). Usage should be adjusted to preference.

Q. When I request a recipe should I use the cultures, rennet, lipase etc. recommended.

Q. Should I need processing equipment what do you need to know?

A. Were you are located. Product you like to make and capacity. For batch or continuous flow pasteurizer we need to know the utilities you have available. Steam or hot water. Power available.

Q. Can payment be arranged with credit card?

A. Yes.

You can also mail a check with the order; allow 1 ? 2 weeks for delivery.

Q. How long from my order is received until I have shipment.

A. Normally we can ship in less then two weeks, depending on the cost structure you choice.

Regular mail, Xprespost (Canada & USA) or courier (we need to calculate first - send us an e-mail if urgent).

Q. What size batches will your equipment handle?

A. Anywhere from 200 Lt. (50 gal.) and up.

Q. Are you equipment certified and meet government standards?

A. We meet strict government standards (3 A) and can provide pasteurizer certification in Canada and USA, which most other countries in the world adhere too.

Q. Is shipping cost included in your prices?

A. No! But when you order in our web store it will be added before you make payment, so you see how much is charged.

Q. Are you products kosher?

A. All our starter cultures are kosher. Ask for kosher certificate if needed.

For rennet and lipase no kosher certificates are available. Can in some cases provide halal certificates.
