Listeria Prevention in Soft Cheese

Holdbac Listeria Dairy is a patented protective culture.The culture is proven to biologically inhibit the growth of listeria (among others listeria monocytogenes) on the surface of soft cheese. Its effect depends on strain and species.

Using protective cultures does not mean that hygiene can be neglected. They can just implicate further security. The surface of soft cheese with or without red-smear should be treated with Holdbac Listeria Dairy one to three times during the first days of ripening.
