- Process milk fat standardized (1,5-3,5%f) milk 1000 l (mare milk)
- Standardization dry matter optional addition of 1 % SMP
- Heating 85 - 90 °C, 15 sec
- Cooling to incubation temp. 24 - 32 ° depending on desired TASTE and GAS requirements
- Inoculation 1x Probat KC 3 DIRECT FD 10u + 1x Yo-Mix 101 DIRECT FD 10u
- Incubation at 24-32 °C to pH 4,50 ± 0,05
- Stirring slowly
- Cooling to 12 °C and keep for 2 days ( this can be skiped milder yeast taste is wanted)
- Final cooling and filling into bottels closeable with cork
