DL-starter has nothing to do with D(-) and L(+) lactate. "D" stands for "diacetyl" and "L" stands for "Leuconostoc", so D-/ L- / DL-starter only explains the composition of the genus .
ALL DL-starters produce D(-) as well as L(+) lactate.
There are hardly any bacteria producing only L(+) lactate such as most strains of Lb. casei and Lb. rhamnosus.
Kefir starters in general produce a little D(-) and about 95% L(+)lactate.
